Latvian maple sap syrup — a fantastic addition to sweet dishes, and not only those. Pancakes that call for one more, and one more again… Our sap is less sweet than the Canadian sugar maple normally used for syrup, so the syrup it yields carries a quite different mineral complex and develops another — you might say more expressive — flavour. But because Latvian maples are not overly sweet, their unique syrup needs a far greater quantity of sap: 50–65 litres are reduced into one.
